Fresh Mango Salsa

A paralegal friend shared this recipe with me several months back, and I've just now gotten around to using it. I found mangoes on sale for 50 cents the other day, so thought I'd see how this worked out. We ate it before I could get a picture, but you should give it a try. It was surprisingly good. I think Pam served it with salmon, but I served it over grilled tilapia.

Fresh Mango Salsa

1 fresh mango, peeled and diced
1 fresh jalapeno, finely diced
1/4 cup purple onion, diced
3 Tbsp orange juice
1/2 tsp cumin
1 Tbsp fresh cilantro

Combine all ingredients. Let stand 15 minutes, if possible. Place a generous helping on top of fish.
