Apple desserts

I got a good deal on apples over the weekend, so last night I made an apple pie for us and tonight I made a fresh apple cake to take to the office. That is, if Lonnie leaves any, I'll take it to the office! I got this recipe from a co-worker at Celotex in Camden, Arkansas, about 1978. It calls for an obscene amount of oil, and I've cut down a bit on that and use canola oil instead of vegetable oil, and omitted the nutmeg (I don't like nutmeg), but otherwise, it's the original recipe. It's especially good warm, with a little Blue Bell Vanilla ice cream on top.

FRESH APPLE CAKE
(the original recipe)

Mix together:
1-1/2 c.vegetable oil
3 eggs
2 c. sugar

Sift together:
3 c. flour
1 tsp. soda
1 tsp. salt
1 tsp. cinnamon
1/4 tsp. nutmeg
1/4 tsp. allspice
OR use 1-1/2 tsp. apple pie spice

Add:
1 c. ground pecans
3 c. peeled, chopped apples (apples are best when ripe till mellow)

Pour into greased 10-inch tube or Bundt pan and bake at 350 degrees for one hour or until tests done. Cake improves if allowed to mellow. Use a light glaze frosting if desired.
