Get Your Chocolate Fix!

You've got to try this recipe. As a Director for the Chamber of Commerce, I worked at the Political Forum on Tuesday evening. The Business & Professional Women's group furnished the refreshments. This stuff disappeared, leaving all the cookies far behind. Try it and you'll understand why.


Saltine Cracker Toffee

Saltine crackers
1 cup butter (do not substitute)
1 cup brown sugar
1 12-oz pkg chocolate chips
3/4 cup chopped pecans

Preheat oven to 350 degrees. Line a cookie sheet with aluminum foil.

Arrange crackers on foil. Make sure crackers are flat, touching, and pan is full. My pan was really big, so I used about a sleeve and a half of crackers.

Melt butter and brown sugar in a saucepan and boil for 3 minutes, stirring. Watch carefully because this will burn easily. Pour over crackers, spread with spoon to coat evenly.

Bake at 350 degrees for 5 minutes.

Remove from oven, pour chocolate chips over and pop back in the oven for a couple of minutes to melt the chocolate. Spread the chocolate around to cover the crackers, and then sprinkle pecans on top.

Place in the refrigerator until hard. Break into bite-size or cracker-size pieces.

When I was searching online for the recipe, I saw several variations, some using butterscotch chips, and some using white chocolate. One lady called it cracker "crack" because it's so addictive!
