Satisfaction

There is a certain satisfaction that comes from knowing that you have food put by for the winter.

Yesterday evening, I boiled up a big pot of vegetable peelings and pieces, and another smaller pot of a steak bone and gristle. The resulting broth will make the base for soup, stew, or chili. I ran out of freezer containers of the proper size, so just refrigerated the leftover cup and a half of veggie broth and cooked rice in it tonight for supper.

This morning, I was able to get a couple dozen fresh eggs from Nancy, a woman who works at our office. Her sister has chickens, so I am frequently able to buy fresh brown and green eggs.

Also today, my friend Deb (another lady I work with) brought me a bunch of purple hull peas. She got them from another friend of hers whose freezer is already full. Deb and her husband stayed up till nearly midnight last night shelling peas, and then brought me what was left.


When I got off work this afternoon, Lonnie and I sat out on the deck, protected on the west side by our new sun shade and cooled on the east side by a marvelous little fan, and I shelled a bunch of the peas.

While I worked on supper, Lonnie worked on the peas. We ended up with a gallon Ziploc bag packed just as full as I could get it. Right now, they're in the fridge. I'll blanch and freeze them tomorrow when I get off.

 

These are going to taste so good with a pan of hot buttered cornbread!
