Peach Cobbler

We live here in "peach orchard" country, and love to buy peaches from one of the places over at Pittsburg every summer. Lonnie bought a big ol' box full and now I'm trying to use them up. We had fresh sliced peaches with brunch today, and this evening, he peeled peaches while I made crust, and we put together a peach cobbler.


I used Mama's recipe from the Hollis Cookbook. If you want to try it yourself, here it is.

The Best Cobbler

Cobbler
1 qt fruit (peaches, berries)
1-1/3 to 1-1/2 c. sugar
3 to 4 heaping T. flour
1 stick oleo, melted

Stir flour into sugar and both into fruit. Pour into buttered casserole dish, then drizzle oleo over fruit.

Crust
2 c. flour
2/3 c. shortening
1 tsp. salt
1/2 c. sweet milk
1/2 stick oleo, melted

Make flour, shortening, salt and milk into dough, roll out and cut into strips. Crisscross over fruit. Melt oleo and pour over cobbler. Sprinkle with sugar. Bake at 350 degrees until crispy brown.

And you know you've got to have some Blue Bell Homemade Vanilla ice cream to go with it! Life is good.
